Sweet Potato Toast with Steak, Roasted Peppers and Arugula

Total Time: 30 min
Yield: 6 toasts
Level: Easy

Ingredients:

  • 2 medium sweet potatoes (about 1 pound total)
  • 1 tablespoon extra-virgin olive oil, plus more for drizzling
  • Kosher salt and freshly ground black pepper
  • 3 ounces deli-sliced roasted red bell peppers, drained (about 1/3 cup)
  • 4 ounces cooked sirloin or skirt steak, thinly sliced
  • 1/3 cup arugula or watercress
  • Hot sauce, for serving

Directions:

  1. Preheat the oven to 450 degrees F.
  2. Slice off the 4 long sides of each of the sweet potatoes so the potatoes are squared off and sit flat on a cutting board. Slice the potatoes lengthwise into 1/2-inch-thick planks; about 5-inches-by-2-inches (you should get 3 planks per sweet potato). Combine the sweet potatoes, olive oil and a pinch of salt in a medium bowl and toss gently to coat. Spread them out on a baking sheet and roast, flipping halfway through, until lightly browned and tender when pierced with a knife, about 15 minutes. Remove the sweet potato toasts to 2 plates.
  3. Divide the peppers among the toasts, and then top with the steak. In a small bowl, toss the arugula with a drizzle of olive oil and dash of hot sauce, then distribute over the steak. Season each toast with salt and a couple grinds of black pepper. Serve immediately.

Wellness Corner

It may seem like there’s nothing you can do about stress. The bills won’t stop coming, there will never be more hours in the day, and your work and family responsibilities will always be demanding. But you have a lot more control than you might think. In fact, the simple realization that you’re in control of your life is the foundation of stress management. Stress management is all about taking charge: of your lifestyle, thoughts, emotions, and the way you deal with problems. No matter how stressful your life seems, there are steps you can take to relieve the pressure and regain control.

Come up with a list of healthy ways to relax and recharge. Try to implement one or more of these ideas each day, even if you're feeling good.

  • Go for a walk
  • Call a good friend
  • Sweat out tension with a workout
  • Write in your journal
  • Take a long bath
  • Play with a pet
  • Get a massage
  • Listen to music
  • Watch a comedy

Courtesy Reminders

  • If having guests over, please make sure to have them park in extra parking and leave prime parking for residents.
  • RESIDENTS ARE RESPONSIBLE FOR CLEANING UP ANIMAL WASTE. FAILURE TO DO SO WILL RESULT IN A $ 60.00 PENALTY. PETS MUST BE WALKED AWAY FROM BUILDINGS. DOGS MUST BE KEPT ON A LEASH AT ALL TIMES.
  • Dogs are only allowed to defecate or urinate in areas away from the apartment premises.

Trash Compactor

Please remember the recycling receptacle to the left of the trash compactor is for broken down CARDBOARD BOXES ONLY EFFECTIVE IMMEDIATELY.

Do not dispose of large bulky items in the compactor. Disposing of such items actually causes our compactor to either jam or burn the motor causing garbage back up that is very unsightly. You can dispose of them at our local waste/recycling convenience center located at 130 Castle Rock Road, open 7:30am-7pm closed on Wednesdays. This is less than a mile from the community. Thank you so much for your cooperation.

Maintenance Tip

It is recommended that you do not use chlorine/bleach based tank tabs in your toilet tank. The active ingredients in these tabs may be dichlor or trichlor. These ingredients can damage gaskets and seals in your toilets and cause them to leak. Furthermore, once they dissolve to a smaller size they can limit the water flow in your toilet causing clogging and other problems. This issue is worse in toilets that do not get flushed several times a day.

Tanning Products

Interested in tanning? We now have tanning goggles and tanning lotion for sale!
