ROHO’s Chili

Two of our very own residents make an award winning chili that is to die for. We talked to them and got their special recipe! We would love to know if you tried it, so send us pictures in Facebook and show us your cooking skills.

Process:

    1) Sauté together: onion, celery, green pepper, red pepper, shredded carrots.
    2) Add to the pan: 1Lb. ground chuck, 1Lb. ground italian sausage.

Combine all of the above together and sauté to blend. In a large stock pot or crock pot combine all the above with:

  • 1lg can chopped tomatoes
  • 3 cans of different types of beans (ex. dark kidney beans, white beans, pinto beans...)
  • ½ bottle of any beer
  • ½ c. beef broth
  • 2 sm cans of tomato sauce
  • ½ can of chopped chilis (can use the whole can if you want it spicier)
  • 1 tbsp of chili powder
  • 1tbsp oregano
  • 1tsp tabasco
  • 1tsp cayenne pepper
  • 1tsp white sugar
  • 1tbsp worcestershire sauce
  • 2 tsp ground cumin
  • 1tsp dried basil
  • 1tsp paprika
  • 1tbsp crushed garlic

Continue to cook for 3-4 hours until it is well blended. Serve with cheese and tortilla chips.

Chocolate Mint Brownies

Looking for a chocolate dessert? Then check out this mouthwatering mint brownie recipe perfect for St Patrick’s Day.

Ingredients:

  • Brownies
    1 box (1lb 2.3oz) fudge brownie mix
    Water, vegetable oil and eggs called for on brownie mix box
  • Filling
    4 cups of powdered sugar
    1 package (3 oz) cream cheese, softened
    ¼ cup butter or margarine, softened
    ¼ cup milk
    1 teaspoon vanilla
    ¼ teaspoon peppermint extract
    8 to 10 drops green food color
  • Frosting
    1 cup semisweet chocolate chips (6 oz)
    ¼ cup butter or margarine, softened
    ¼ cup whipping cream

Process:

Step 1:
Heat oven to 350°F. Grease bottom only of 13x9-inch pan with shortening or cooking spray. Make and bake brownie mix as directed on box for 13x9-inch pan using water, oil and eggs. Cool completely, about 1 hour.

Step 2:
In large bowl, beat all filling ingredients on medium speed until smooth. Spread over cooled brownies. Refrigerate about 1 hour before frosting.

Step 3:
In small saucepan, melt chocolate chips, 1/4 cup butter and the cream over low heat, stirring constantly. Remove from heat; cool 10 minutes. Pour over filling. Refrigerate about 1 hour or until chocolate is set. Cut into bars. Store in refrigerator.


Warning

Glass bottles of any kind are prohibited from our pool. If found, please dispose of them accordingly and let our leasing staff know. Also, there is a fine for getting caught with glass in the pool. Please help us conserve a safe environment in our community.
