Sweet Tea Ribs with Lemony Potato Salad

Total Time: 30 min
Yield: 4 to 6 toasts
Level: Easy

Ingredients:

  • 6 bags black tea (any kind)
  • 1/4 cup plus 2 tablespoons packed light brown sugar
  • Kosher salt and freshly ground pepper
  • 1 orange
  • 2 racks baby back ribs (about 2 pounds)
  • 2 pounds russet potatoes, peeled and cut into 3/4-inch chunks
  • 1/2 cup mayonnaise
  • 1 tablespoon chopped fresh parsley
  • 1 lemon

Directions:

  1. Empty 3 tea bags into a bowl and combine the loose tea with 1/4 cup brown sugar, 2 teaspoons salt and 1/4 teaspoon pepper. Grate in the orange zest. Pat the ribs dry and trim the membrane from the underside. Rub the tea mixture over the ribs; place in a roasting pan, meat-side up, and bring to room temperature, about 20 minutes.
  2. Preheat the oven to 275 degrees F. Steep the remaining 3 tea bags in 2 cups boiling water, about 5 minutes. Discard the bags and stir in the remaining 2 tablespoons brown sugar and the juice of half the orange. Pour the mixture around the ribs in the pan. Cover with foil and roast until tender, about 1 hour 30 minutes.
  3. Meanwhile, put the potatoes in a pot of salted water; bring to a simmer and cook until tender, about 5 minutes. Drain and cool slightly. Mix the mayonnaise and parsley in a large bowl. Grate in the zest of half the lemon; add the juice of the lemon half. Fold in the potatoes and add 11/2 teaspoons salt, and pepper to taste; refrigerate until ready to serve.
  4. Remove the ribs from the oven and increase the temperature to 450. Pour the cooking liquid into a saucepan and bring to a simmer over medium-high heat. Baste the ribs with some of the liquid, then return to the oven and cook, uncovered, basting a few times, until the ribs are dark and glazed, 20 to 30 minutes.
  5. When the remaining liquid in the saucepan is syrupy, add lemon juice to taste. Brush the ribs with the glaze. Cut the racks into pieces and serve with the potato salad.

Trash Compactor

Please remember the recycling receptacle to the left of the trash compactor is for broken down CARDBOARD BOXES ONLY EFFECTIVE IMMEDIATELY.

Do not dispose of large bulky items in the compactor. Disposing of such items actually causes our compactor to either jam or burn the motor causing garbage back up that is very unsightly. You can dispose of them at our local waste/recycling convenience center located at 130 Castle Rock Road, open 7:30am-7pm closed on Wednesdays. This is less than a mile from the community. Thank you so much for your cooperation.

Wellness Corner

Safety in the Sun!

Protect yourself from sun exposure. Wear protective clothing, such as hats, UV ray sunglasses and loose-fitting, tightly woven clothing that covers your arms and legs. Beware of the strong, skin-searing midday sun from 10:00 in the morning to 4:00 in the afternoon.

Don’t leave home without sunscreen protection. Use a sunscreen and lip balm with sun protection factors (SPF) of 30 or higher. Apply evenly to all the skin that will be exposed to the sun, including the nose, ears, neck, scalp and lips.

Commit to wearing a hat. Choose a hat that provides the best coverage of your face, temple, ear and neck areas. It’s not always your favorite baseball cap.

Don’t forget your eyes. Always wear sunglasses with a high UV rating (100 is the best rating) to protect your eyes while working outdoors.

Keep your cool. When being outside, stay as cool as possible—find a cool place to rest or take breaks.

  • If having guests over, please make sure to have them park in extra parking and leave prime parking for residents.

Maintenance Tip

There are many relatively new bathroom products on the market today that are advertised as a better cleaning experience when compared to traditional toilet paper. These products labels indicate they are safe for sewers and septic systems. However, that is not always the case. Flushable wipes are marketed in a variety of ways, such as “septic-safe,” “breaks down like toilet paper,” and “safe for sewer and septic.” The problem is that they appear to take longer to break down when compared to traditional toilet paper, and as a result have caused major blockages in sewer systems. If you find that your toilet might be having some problems due to this, please let the office staff know!

HVAC Concerns

Summer is here! If you have any HVAC concerns, please report this to the office immediately.
