Crab Cake Sliders

Total Time: 1hr and 30 min
Yield: 15 sliders
Level: Easy

Ingredients:

  • 18 mini potato buns
  • 1/2 cup plus 2 tablespoons mayonnaise
  • 2 tablespoons unsalted butter, melted, plus more for brushing
  • 1 large egg
  • 1 teaspoon Old Bay Seasoning
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon yellow mustard
  • Kosher salt
  • 1 pound lump crabmeat, picked through
  • 10 strips bacon
  • Finely grated zest of 1 lemon
  • Freshly ground pepper
  • Diced red onion, sliced tomatoes and lettuce leaves, for topping
  • Pickles, for serving (optional)

Directions:

  1. Prepare the crab cakes: Tear 3 buns into small pieces to make about 3/4 cup; put in a medium bowl. Whisk 2 tablespoons mayonnaise, the melted butter, egg, Old Bay, Worcestershire sauce, mustard and 1/4 teaspoon salt in another bowl. Add the mayonnaise mixture to the bun pieces and stir to combine; let sit 10 minutes, then gently fold in the crabmeat. Brush a baking sheet with butter. Tightly pack the crab mixture into 15 small patties and arrange on the prepared baking sheet; refrigerate at least 1 hour or overnight.
  2. Meanwhile, preheat the oven to 350 degrees F. Arrange the bacon on a rimmed baking sheet in a single layer and bake until golden and slightly crisp, about 20 minutes. Transfer to a paper towel-lined plate, reserving 1 tablespoon of the drippings. Break each piece of bacon into thirds; set aside. Combine the remaining 1/2 cup mayonnaise, the lemon zest and the reserved bacon drippings in a bowl; season with salt and pepper.
  3. Preheat the broiler. Arrange the remaining 15 buns cut-side up on a baking sheet; brush with butter and broil until golden. Transfer the crab cakes to the broiler and cook, rotating the pan as needed, until golden and warmed through, about 6 minutes.
  4. Spread the cut sides of the buns with some of the lemon mayonnaise. Sprinkle with diced red onion. Serve the crab cakes on the buns with tomatoes, lettuce and the bacon. Serve with pickles.

Trash Compactor

Please remember the recycling receptacle to the left of the trash compactor is for broken down CARDBOARD BOXES ONLY EFFECTIVE IMMEDIATELY.

Do not dispose of large bulky items in the compactor. Disposing of such items actually causes our compactor to either jam or burn the motor causing garbage back up that is very unsightly. You can dispose of them at our local waste/recycling convenience center located at 130 Castle Rock Road, open 7:30am-7pm closed on Wednesdays. This is less than a mile from the community. Thank you so much for your cooperation.

Wellness Corner

3 Easy Tips to Enhance Your Back Massage

  1. Use ice to enhance pain relief

Incorporating ice into your “Do It Yourself” massage is a simple and natural way to enhance the pain relief from a massage. Cold therapy can alleviate your pain by reducing inflammation and swelling, and it also functions similar to a local anesthetic by numbing your sore tissues.

  2. Utilize a foam roller for your upper back stiffness

If you have tight upper back muscles, a foam roller is a great option for enhancing a DIY upper back massage. These rollers are inexpensive and come in varying levels of firmness depending on your needs.

  3. Purchase a hand-held massager

If you have upper or lower back pain, it can be tiring to use your hands for a DIY massage that lasts for more than a few minutes. Additionally, there can be spots on your back that are hard to reach; and so you have to contort your body into uncomfortable positions.

Courtesy Reminders

  • If you are the proud owner of an extended cab vehicle, please be mindful and refer from backing over sidewalks. This prevents our sidewalks from being accessible to all residents.
  • RESIDENTS ARE RESPONSIBLE FOR CLEANING UP ANIMAL WASTE. FAILURE TO DO SO WILL RESULT IN A $ 60.00 PENALTY. PETS MUST BE WALKED AWAY FROM BUILDINGS. DOGS MUST BE KEPT ON A LEASH AT ALL TIMES.
  • Dogs are only allowed to defecate or urinate in areas away from the apartment premises.
