Super Bowl XLIX Party!

Holiday Décor and Tree Disposal

Our holiday season is over we sincerely enjoyed all of the festive holiday decorations. As a reminder please remove any holiday decorations such as lights, and flags within your patio.Please do not dispose of you tree in the trash compactor. You can help Beaufort County by participating in the annual Grinding of the Greens project.

By participating you can return your Christmas trees to the land as mulch. This process is environmentally friendly and saves room at the landfill. You will need to remove any decorations from you tree and deliver it to one of the following locations by January 11th. You can deliver them anytime day or night.

Lady’s Island- Pleasant Point Road at the Family Tree Christmas Tree Farm

Beaufort –Beaufort Plaza near the Plaza Theaters

Port Royal – The Naval Heritage Park off Ribaut Road

Help Keep Ashton Pointe Beautiful…

We have seen an increase in litter throughout our community. Please help us keep Ashton Pointe clean by disposing of any garbage, cups, cigarette butts etc. in the designated areas. Do not leave any household garbage outside of your door or in the breezeway. This can cause issues with pests and animals not to mention it is unsightly. If you fail to dispose of trash properly a $60 fine will be assessed. If you witness one of your neighbors not disposing of items properly please bring it to our attention.

Garages Available

Are you trying to be clutter free this year? Contact our office for a garage rental. You can park your car and get rid of those extra items that are taking up closet space. Rentals are $120 monthly.

Grilled Bread with Ricotta & Tomatoes

Ingredients:

  • 1 garlic clove
  • Kosher salt
  • 1 tablespoon red wine vinegar
  • 6 tablespoons olive oil, divided
  • 3/4 pound assorted small tomatoes (such as cherry, Sun Gold, or green), halved, quartered if large
  • Freshly ground black pepper
  • 8 3/4"-thick slices country-style bread
  • 1 cup (loosely packed) coarsely chopped mixed tender herbs (such as basil, parsley, small dill sprigs, and/or chives)
  • 10 ounces whole-milk ricotta

Preparation:

Finely chop garlic, sprinkle with a pinch of salt, then mash with the side of knife to a fine paste. Transfer to a medium bowl and whisk in vinegar and 2 tablespoons oil. Add tomatoes; season with salt and pepper and toss to coat. Let sit, tossing occasionally, for at least 15 minutes.

Meanwhile, prepare grill for medium-high heat. Brush both sides of bread with remaining 4 tablespoons oil and grill until lightly charred, about 2 minutes per side.

Just before serving, toss herbs with tomato mixture. Spread ricotta on toast and top with tomato mixture; cut toast in half.

**Use very ripe—even overripe—tomatoes; they'll give up even more juice.

** Tomato mixture (without herbs) can be made 12 hours ahead. Cover and chill

It’s a New Year! Let’s start it off right by taking care of ourselves.

Here are a few simple steps to get you going on the right track…

  • Write it down. Post your goals and exercise plan where you will see it!
  • Do Not set a difficult goal. Start off easy with 5 minutes a day and work your way up. This will help build the habit of exercising.
  • Be specific. Pick an activity you enjoy, pick the time of day (if possible), and where you will exercise.
  • Measurable goals. Stick to this one goal for at least a month. Then change it up a bit for your next goal. Keep it interesting!
  • Motivation! Get out your headphones and listen to music that will get you moving!

Hang that shirt or dress that’s too small in a visible place as motivation.

A cardio workout improves the function and health of the heart, lungs, and blood vessels. Weight-bearing exercises enhance the function and health of the bones, muscles, joints, and connective tissues.
