Maintenance Tip

Be sure to run your dishwasher at least once a month. “Once a month? What are we, savages? We use it daily!” If you do like to hand-wash your dishes (and we’re not judging you for that), make sure you run the dishwasher once a month, it will help keep any musty smells away.

If you do use your dishwasher, it’s always a good idea to not overload it and only use dishwasher detergent recommended for automatic dishwashers. Also keep in mind that dishwasher detergent is formulated to work best with water that is 120°F, so before you start your dishwasher, it is a good idea to run the kitchen faucet till the water gets hot.

Gulf Shrimp Orzo

Total Time: 40 mins.
Yield: 15 sliders
Level: Easy

Ingredients:

  • 3 tablespoons olive oil, divided
  • 1 medium-size yellow onion, chopped
  • 1 pint grape tomatoes, halved
  • 3 garlic cloves, minced
  • 2 teaspoons chopped fresh oregano
  • 1 1/4 teaspoons kosher salt, divided
  • 1/2 teaspoon black pepper, divided
  • 3 1/4 cups chicken broth
  • 12 ounces uncooked orzo pasta
  • 1 pound large raw Gulf shrimp, peeled and deveined
  • 1/2 cup panko (Japanese-style breadcrumbs)
  • 1 ounce Parmesan cheese, grated (1/4 cup)
  • 2 tablespoons salted butter, melted
  • 2 teaspoons lemon zest
  • Torn fresh flat-leaf parsley
  • Lemon wedges

Directions:

Step 1

Preheat oven to 400°F with oven rack 5 to 6 inches from heat source. Heat 2 tablespoons of the oil in a large ovenproof skillet (with a lid) over medium-high.

Add onion, and cook until translucent, about 5 minutes. Add tomatoes, garlic, oregano, 3/4 teaspoon salt, and 1/4 teaspoon pepper; cook until tomatoes are softened, about 2 minutes. Stir in broth and orzo; bring to a boil, stirring occasionally.

Cover and bake until orzo is tender and liquid is mostly absorbed, about 15 minutes. Remove from oven; increase temperature to broil.

Step 2

Toss shrimp with remaining 1 tablespoon oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper; arrange shrimp on orzo. Combine panko, Parmesan, butter, and lemon zest; sprinkle over shrimp and orzo. Return to oven; broil, uncovered, until shrimp are opaque, 4 minutes. Garnish with parsley and lemon wedges.

Trash Compactor

Please remember the recycling receptacle to the left of the trash compactor is for broken down CARDBOARD BOXES ONLY EFFECTIVE IMMEDIATELY.

Do not dispose of large bulky items in the compactor. Disposing of such items actually causes our compactor to either jam or burn the motor causing garbage back up that is very unsightly.

You can dispose of them at our local waste/recycling convenience center located at 130 Castle Rock Road, open 7:30am-7pm closed on Wednesdays. This is less than a mile from the community. Thank you so much for your cooperation.

Wellness Corner: Make your own sunscreen bars!

What You’ll Need:

  • Coconut Oil
  • Shea butter, cocoa butter or mango butter (or a mix of all three equal to 1 cup)
  • beeswax
  • non-nano Zinc Oxide
  • Optional: Vitamin E oil to preserve
  • Optional: a few drops of vanilla or essential oil for scent (do not use citrus oils!)
  • A double boiler or glass bowl over a small pan
  • Silicone molds or empty deodorant containers for an easy-to-apply solution

Sunscreen bar Ingredients:

  • 1 cup coconut oil
  • 1 cup shea butter, cocoa butter or mango butter (or a mix of all three equal to 1 cup)
  • 1 cup beeswax (can add an extra ounce or two if you want a thicker consistency, which leaves less lotion on the skin when used)
  • 2 tablespoons (or more) of non-nano Zinc Oxide
  • Optional: Vitamin E oil to preserve. I added 1 tsp vitamin E oil for this recipe made with 1 cup of each ingredient)
  • Optional: a few drops of vanilla or essential oil for scent

Sunscreen bar Instructions:

1. Combine all ingredients (except zinc oxide and essential oils if using) in a double boiler, or a glass bowl over a smaller saucepan with 1 inch of water in it.

2. Turn the burner on and bring water to a boil. Stir ingredients constantly until they are melted and smooth:

3. Remove from heat and add the zinc oxide powder and essential oils.

4. Gently stir by hand until essential oils are incorporated.

5. Carefully pour into molds or whatever you will be allowing the lotion bars to harden in. I used these silicon baking cups, though any mold would work. This recipe exactly filled 12 silicon baking cups when I made it.

6. Allow the lotion bars to cool completely before attempting to pop out of molds. These could be made in different shaped molds for different holiday gifts (hearts for valentines, flowers for Mother’s day, etc.) or made in a square baking pan and then cut into actual bars.

7. They can be stored at room temperature or in the fridge or freezer for longer term storage. Keep below 80 degrees or they will melt! Adjust coverage to your needs and be careful not to burn while determining how long you can spend in the sun with these.
